Kuzhambu Podi or also known as sambhar podi/powder. This can be used to make sambhar , gojju ,kuzhambu and poriyal / vegetable stir fries varieties. This is a south indian type of ground masala powder.
|Dry red chillies||4 cups (1 cup = 200 grams)|
|Coriander seeds||3 cups|
|Channa dal||3 tbsp|
|Fenugreek seeds||3 tsp|
- For the kuzhambu podi the ratio of dry red chillies and corriander seeds is 4:3 , i.e, 4 parts of dry red chillies and 3 parts of corriander seeds. you can use any measuring cup. just remeber the ratio.
- First grind the dry red chillies in the food processor or mixie , so that it does not get overloaded.
- Then add the coriander seeds , channa dal and fengreek seeds / methi seeds. Grind this into a fine powder. To get thick consistency of kuzhambu / sambar , you need to grind it into a fine powder.
