2 method Okra Stir fry

Vendakai Karamdhu or okra stir fry , is actually every child’s nightmare to eat . 95% of them make faces to eat or belch after eating it. If you are a South Indian , you must have heard your parents say “Eat vendakai , only then you’ll get 100 out of 100 in maths. Eat..Eat”.I have no clue as to how vendakai is related to Maths. Scientists working on it(Sarcasm , not to be taken seriously).

Its not so pleasant for the eyes or for your tongue because 95% of them don’t know how to make this delectable dish. Yep!! DELECTABLE. vendakai is one of my favorite vegetables and a stir fry is just yumm..mmm..mmm!!! .

Problem is : Some of them cut into haphazard shapes and it looks very uneven , some of them over cook it and looks like carbon samples , some of them under cook it and it looks like one ewwie!! gooey!! monster that is about to attack you and worst of all some of them PRESSURE COOK IT.(AAAAAAHHHHH!!!!!)

Poor vegetable , Y U PEOPLEZZZZ DO THIS YA??

So here is my simple solution , I shall show you two methods of frying them to perfection one is kid friendly and the other is Adult friendly.

2 method okra stir fry

Ingredients

Method 1(Adults)
1 cup Chopped okra
4 tbsps vegetable oil
1 tbsp white urad dal
1 tsp chana dal
pinch asafoetida
1 tsp mustard seeds
1/4 tsp turmeric
1/2 tsp red chilly powder
1 tsp Kuzhambu Podi
to taste salt
Method 2(Kids)
1 cup chopped okra
4 tbsps vegetable oil
1 tsp chana dal
1 tsp white urad dal
1 tsp mustard seeds
pinch asafoetida
1 tsp black pepper powder
to taste salt
1 green chilly
chopped coriander leaves

Steps

    METHOD 1 (Adults)
  1. Take a wok , on medium heat add 4 tbsps of oil , urad dal , chana dal , asafoetida , mustard seeds. Saute them until aromatic.
  2. Now add the chopped okra and mix.
  3. Add all the powder ingredients and mix.
  4. You will see that the okra will leave out its enzymes and look very sticky , this means it has started cooking.
  5. Keep stirring in medium heat for about 7 minutes. Until the sticky-ness goes and looks crispy and also green. PLEASE DO NOT MASH THE OKRA WITH YOUR LADLE , THAT IS VERY BARBARIC FOR BOTH THE VEGETABLE AND THE ANIMAL WHO IS GOING TO EAT IT.
  6. Now take it off the heat and transfer it to a serving bowl.

    METHOD 2(KIDS)
  1. Take a wok , on medium heat add 4 tbsps of oil , urad dal , chana dal , asafoetida , mustard seeds. Saute them until aromatic.
  2. Now add the chopped okra and mix.
  3. Add all the powder ingredients mentioned under Method 2 and mix.
  4. You will see that the okra will leave out its enzymes and look very sticky , this means it has started cooking. At this stage add 1 slit green chilly. Green chilly is high in vitamin C and is good for your child. From a young nascent stage accustom your child to the spice level of a chilly. Its much better than any other spice resources.
  5. Keep stirring in medium heat for about 7 minutes. Until the sticky-ness goes and looks crispy and also green. For the child you can fry it a little bit more maybe for another 3 minutes extra until its gets crisp ,it’ll lose its color but not its nutrition.
  6. Garnish with coriander leaves and take it off the heat. Now show this to your child and see how they enjoy eating it.
