Broccoli Soup

Broccoli Soup , simplest way to make your little ones eat greens. A very simple recipe also very flavorful . Took me about 15 minutes to make. NON PRESSURE COOKER version.

SYNOPSIS

Vegetables required for the soup

Wash and chop the broccoli into small florets(200 grams) . Peel and roughly chop one medium sized potato. Chop two onions ,roughly . Peel two garlic cloves , finely chop half a cabbage , if you don’t wish to add cabbage then you can opt for leeks or celery.

The Soup

Add all the vegetables in a big vessel and fill it with water ( let the vegetables immerse in water). Keep this on high heat and close it with a lid. Let it boil for about 10-12 minutes. Switch off the heat , check if the veggies are cooked thoroughly , take out only the cooked vegetables and transfer it to a blender jar or mixer. Let it cool down a bit , close the mixer with a lid and grind this to a smooth paste.

Now add this paste back into the vessel with its broth , and switch on the heat , keep it on medium high , add 1/2 cup of boiled milk to the soup and mix. Add the required amount of salt ,2 tsps of black pepper powder and a nice dollop of butter. Bring this to a boil. Switch off the heat and serve it hot in a soup bowl along with crispy bread toast.

Ingredients

Broccoli (Florets) 200 grams
Medium sized potato(peeled and roughly chopped) 1
Medium sized onions(roughly chopped) 2
Cabbage(finely chopped) ½
Garlic cloves 2
Salt To taste
water 400-500ml
Black pepper powder 2 tsp
Butter 2 tsp
Milk(raw or boiled) ½ cup

 

Steps

  1. Peel and chop all the above mentioned vegetables and set it aside.
  2. Take a big vessel , add in all the chopped veggies , add water until they immerse. Keep this on high heat ,close this with a lid and allow it to cook for about 10-12 minutes.
  3. Once the vegetables are cooked ,take out only the cooked vegetables and transfer it to a blender jar or mixer. Let it cool down a bit and grind this to a smooth paste.
  4. Add the paste back into the vessel with its broth , switch on the heat , keep it on medium high , add 1/2 cup of boiled milk to the soup and mix.
  5. Add the required amount of salt ,2 tsps of black pepper powder and a nice dollop of butter. Bring this to a boil.
  6. Stir in between while its boiling , do not allow it to boil for too long just about 2-3 minutes should do. Switch off the heat and serve it hot along with a nice toasted bread.
