Beans ParuppuAraichu(Paruppu Usilli)

 

Beans ParuppuAraichu or paruppu usilli is a common accompaniment or karamadhu(poriyal) that is served in Tamil style weddings. Not once have I come across a wedding that did not serve this truly wonderful dish. The specialty of this dish is the grainy texture , it is soft to chew , yet it looks very granular and dry.

Ingredients

  • 200 grams green beans
  • salt to taste
  • 1 pinch cooking soda
  • 1 tspn sugar
  • 3 tsps oil
  • 1 tspn mustard seed
  • finely chopped coriander (for garnish)
  • 1 tbsp freshly grated coconut (for garnish) (Optional)

For the Usilli

  • 5 tbsps of channa dal (Kadalai Paruppu)
  • 3 tbsps of toor dal (Thuvaram paruppu)
  • 4 dry red chillies
  • salt to taste
  • 1/4 tspn asafoetida
  • 1 pinch of turmeric
  • 5-6 curry leaves

Steps

For the Usilli

  1. Soak channa dal , toor dal and dry red chillies in water for 30 minutes.Do not add too much water , it should just about immerse in water.
  2. After 30 minutes , check the dals , it would have absorbed all the water , if there is excess water left , discard that water. While grinding the dals it has to be dry , only the moisture absorbed while soaking is needed to grind this to a coarse paste.
  3. Transfer the soaked dals and dry red chillies to a mixer jar , add salt , asafoetida , turmeric and curry leaves. Grind this to a coarse paste .
  4. Take a microwaveable plate , grease it with some sesame seed oil , spread the paste on to the plate evenly.
  5. Bake this in microwave oven for about 3-4 minutes.
  6. Once this is done , take it out. You will see a thin biscuit , break this biscuit into small pieces and add it to the mixer jar again.
  7. This time use the pulse mode of your mixier,press it 3 times , and grind it to a coarse powder. You can make this in small batches. Use the smallest jar and not the big one that is used to make milkshakes.
  8. The Usilli Powder is ready to be used.

Cooking the green beans

  1. Take about 200 grams of green beans and wash it thoroughly.
  2. De-stem its stalk and cut it into small cubes.
  3. Take a wok or kadaai , keep it on medium heat , add oil. Crackle mustard seeds and add the chopped green beans and saute.
  4. Add salt , sugar and cooking soda to the beans. Remember you have already added salt for the Usilli , so add salt wisely do not add too much of it. Sugar is added to retain the color of the beans and cooking soda is added to cook the beans soft and increase its cooking time.
  5. Once the beans have cooked add the freshly prepared Usilli Powder to it and mix thoroughly for about 3-4 minutes.
  6. Take it off the heat , garnish it with finely chopped coriander and freshly grated coconut(Optional).
