Thaalicha Kootu

 

Thaalicha Kootu or Tempered Lentil stew , is named so , because unlike other types of kootu or lentil stew preparations where fresh spices and coconut is roasted in ghee and ground to a paste and added to the boiling stew , this one does not require any such special preparations to be made. In fact it can be categorized under “One Pot Dish” , it literally requires only a pressure cooker .

One can use vegetables like Chayote(Chow-Chow) , Snake gourd(Pudalangai) and Ash-Gourd(Pooshanikai) , for making this type of kootu , I’ve used 1 chayote(chow-chow) that is 300 grams .

Firstly clean the chayote , peel and cut into small cubes. Take a pressure cooker , add the chopped chayote to it. Add 1/2 a cup or 2 handfulls of moong dal , add water until the dal and chayote gets immersed completely , don’t add too much of water , otherwise the kootu will be in running consistency , kootu should always be in semi gravy consistency. Add 1 handfull of grated coconut.

To this add a pinch of turmeric and required amount of salt for this dish.

Now take a tadka pan or any small pan , keep it on low flame. Add a tbsp of ghee , let it melt , now add a tsp of mustard seeds , cumin ,split white urad dal(udaicha ullundhu) , 3 dried chillies(break it open ) , 5-6 curry leaves , a pinch of asafoetida , and saute all of this until aromatic. Add this into the pressure cooker. Now keep the pressure cooker in medium flame and allow it to cook for 4 whistles. Turn off the stove and let the pressure come out on its own.

Transfer the cooked kootu in to a serving bowl and serve it hot with plain rice.

Ingredients

For Tempering

  • 1 tbsp ghee / clarified butter
  • 1 tsp mustard seeds
  • 1 tsp cumin
  • 1 tsp split white urad dal (Udaicha ullundhu paruppu)
  • 3 dried red chillies
  • a pinch of asafoetida
  • 5-6 curry leaves

Steps

  1. Firstly clean the chayote , peel and cut into small cubes.
  2. Take a pressure cooker , add the chopped chayote to it. Add 1/2 a cup or 2 handfulls of moong dal , add water until the dal and chayote gets immersed completely.
  3. Add 1 handfull of grated coconut.To this add a pinch of turmeric and required amount of salt for this dish.
  4. Take a tadka pan or any small pan , keep it on low flame. Add a tbsp of ghee , let it melt , now add a tsp of mustard seeds , cumin ,split white urad dal(udaicha ullundhu) , 3 dried chillies(break it open ) , 5-6 curry leaves , a pinch of asafoetida , and saute all of this until aromatic.
  5. Add the prepared Tadka / thallippu  into the pressure cooker.
  6. Keep the pressure cooker in medium flame and allow it to cook for 4 whistles.
  7. Switch off the stove ,and let the pressure come out on its own , this will take about 10-15 minutes. This step is very important , as it will further cook the contents inside the cooker in the persisting heat. Do not try to pull out the weight on the pressure cooker at this stage. If you do so , you will get an under cooked kootu / stew.
  8. Transfer the cooked kootu in to a serving bowl and serve it hot with plain rice.
